The Levantine Region

Before modern borders were etched into maps and various colonizers arrived, the Levant breathed as one. This region, historically known as Greater Syria or Bilad el-Sham in Arabic, was a borderless ecosystem of shared language, trade, heritage and of course food.

Our agricultural landscape shaped the global culinary identity we enjoy today and created the foundation of the Western pantry. From our green olive oil and the crunch of pistachios to vibrant pomegranates and the earthy complexity of za’atar, our land provided the blueprint for the flavors the world has come to love.

Today, I bring you our traditional Jibneh, Syrian cheese recipe to share another piece of our enduring history and offer you a handmade taste of our heritage to your table.
